Today was another busy day at work, but I did meet all of my health goals. I created a new checklist for myself to stay accountable. One of the great lessons I've learned in this whole process is that 80% of fitness results can be attributed to proper planning. I never just prepare one meal when I cook because I can cook 4 chicken breasts as easily as I can cook one. I simply marinate them all in fat free Italian dressing overnight and put them all under the broiler until done or use my George Foreman grill.
Plastic baggies are a godsend. I put each breast in a plastic baggie and stick them in the freezer. That way, I have individual servings and can heat when needed for a quick meal. I also prepare brown rice in bulk and divide it up into 1/2 c. servings. Finally, I prepare my vegetables and divide those up into 1 c. servings.
Preparing my meals ahead gives me no excuse when I come home from work and say I'm too tired to cook. As I always say, in order to be successful at this, the food must taste good and it must be convenient. Preparing food ahead helps on both counts!
